Happy Monday, lovelies! Who else is a little (okay, maybe a lot) sad to see the weekend go? I always feel like our weekends fly by all too quickly, so this time around, Armon and I were determined to make this weekend last. Last Thursday was my sweet hubby’s birthday, but we were both incredibly busy with classes and work. So instead, we decided to christen this weekend his official birthday weekend, which we filled with tons of delicious food, long walks in our neighborhood, and some long overdue Netflix marathons.
Armon is a full-time student and I’m a full-time small business owner, so personal time has fallen embarrassingly low on our priority list. We’re rectifying that by pursuing more personal projects that bring us joy, and for me that’s a newfound love of pseudo-gardening! I say “pseudo” because I have a notorious black thumb, and really the only things I’m gardening in the traditional sense are the sweet little herb plants that now call our window box home. Fingers crossed I can keep these little friends alive so we can enjoy their harvests through the summer! I also ambitiously added a Meyer Lemon tree to the family. I’m still deciding whether this is brave or foolhardy.
What’s better after an afternoon of mothering your new plant babies than a fresh cocktail, right? Since our cozy Netflix night in was all in the name of a belated birthday celebration, I thought our beverages should be equally festive. So I whipped up the easiest, and tastiest, citrus margaritas ever, which have us anxiously awaiting summer sunshine and poolside lounging. Interested in making these tasty libations for yourself? Here’s the recipe below:
Grapefruit Margaritas
Serves 1
¼ c fresh grapefruit juice
3 tbs fresh lime juice
1 oz triple sec
1.5 oz tequila (we used silver)
Lime wedges for garnish
Salt or sugar for rimming glasses
Squeeze your citrus right before mixing for the freshest flavor possible! In a cocktail shaker, combine all fruit juices and liquor and shake vigorously. Rim your glasses with either salt or sugar, and pour away! For a virgin mocktail, try replacing the alcohol for club soda for a bubbly, light finish.
